| ChileDr Peppers 2008 Aji Angelo – Aji-type peppers are hot and have some of the best flavor for fresh salsa or hot sauce. They also dry well for making a hot red chile powder. This one takes a little longer to mature, but it’s beautiful, delicious and well worth the wait! 4-in. pods ripen from green to a bright red. 90 days. Aji Chinchi Amarillo - These flavorful and aromatic pods from Peru ripen from green to a beautiful sunset orange and grow to 2-3”. Use fresh in salsa or dry for making hot golden chile powder. One of the few Aji-type peppers to ripen in the cooler weather and shorter season of northern climates. 85 days. Alcalde NM - From northern NM at 6,300'. A native New Mexico chile with mild- medium heat is usually roasted while green or wait for it to turn red. Can also be dried when fully red ripe. 4-in pods. 75 days. Ancho Magnifico – The earliest and biggest Ancho bred specifically for shorter seasons. These have that classic Poblano flavor, making them perfect for homemade chile rellenos and a wealth of other culinary possibilities. Deep green color eventually ripens to a rich red, which can then be dried for powder. 70 days. Antilles Red Habanero – A truly beautiful red habanero from the Caribbean. These aromatic heirloom peppers have all the hot, fruity flavor you expect from a red hab, plus deep ribbing for picture-perfect pods. Makes fantastic hot sauce with excellent flavor. Can also be dried when fully ripe. 90 days. Ariane – This Dutch variety of bell pepper ripens to a rich orange color earlier than other orange bells. It also has a fabulous sweet flavor, making it a truly outstanding pepper. Beautiful and delicious! 68 days. Aurora – If you’ve never grown a really purple pepper, this one will knock your socks off! Small 10” high plants with thick 1-1/2” hot peppers that start out lavender, then turn deep purple, then orange, then red. Mostly used as an ornamental, can also be eaten at any color stage. Ideal for smaller containers. 75 days. Bhutan Pepper - Seeds from delicious dried chiles brought back from Bhutan. This is a reliable producer of medium hot 4-in pods with excellent flavor. Great for stir-fry’s or drying. Was the first to ripen last year and just kept producing. Can’t get these anywhere else. Limited supply. 72 days. Big Bomb – Big, bright red, hot cherry peppers load up in abundance earlier in the season than most other hot cherry peppers. Measures about 2" wide and long with thick walls and a medium-hot flavor that is just perfect for pickling or stuffing with cheese. 65 days. Big Chile - This is consistently the best-performing and highest-yielding variety I know of for this area. If you have not grown these before, you won’t believe how many huge 8-9” Anaheim-type peppers you’ll get off each plant. This is the classic California green chile used for roasting, stuffing, and adding to your favorite dishes. Very mild with no detectable heat, will turn red if left on plant to ripen. 68 days. Black Hungarian - Highly ornamental and useful in the kitchen, the black peppers grow on plants with dark green foliage highlighted by purple veins and purple flowers. Plants produce good yields of 3" fruits similar in shape and heat to jalapenos, but shiny black ripening to red. A gorgeous heirloom! 75 days. Bolivian Rainbow - Grown for centuries in Bolivia, this beautiful ornamental plant with purple foliage and flowers bears a profusion of fruit in a rainbow of colors. The small, cone-shaped, 1-in. peppers start out purple, then turn to yellow, then orange, and finally to red, with all color stages on the plant at once. Very hot peppers are edible, but are mainly grown for their striking appearance. Great for containers. 80 days. Bulgarian Carrot - An heirloom variety from Bulgaria, this is my favorite for making fresh salsa. Lovely 3-1/2 inch long, vibrant orange peppers have the shape and color of a carrot, but are quite hot. The flavor is fruity without being too hot, which is perfect for use in chutneys, salsas, sauces, and even hot pepper jelly. Produces well on compact plants and the orange color almost glows. Absolutely delicious! 82 days. Chocolate Habanero - This famous heirloom habanero from the Caribbean is not only special for its size and productivity, it also ranks as one of the world’s hottest peppers. Produces green pods up to 2” that ripen to a dark chocolate brown, but handle with care as these are searingly hot! This is a very desirable and flavorful habanero, sought after by the most dedicated hot chile fans wanting extreme heat. 90 days. Congo Red Habanero - In Trinidad, habanero pepper relatives are called 'Congo peppers,' and this one is an extra-large Trinidad red. At nearly 2 inches long, the pods are bigger than the typical red habanero. They have a strong fruity flavor balanced with intense heat, though not the hottest. Ideal for making killer salsa or your own hot sauce. A beautiful heirloom habanero! 90 days. Congo Brown Habanero – A very rare pepper that is similar to the Chocolate Habanero. Maybe even a tad hotter, if that’s possible. You be the judge! This one’s dark brown, exotic, and wicked hot. 95 days. Early Sunsation - Big, blocky bell peppers from Holland are a mature green in 70 days, then turn a lovely golden-yellow in about 2 more weeks. An early bell that’s extra-sweet when fully ripened to yellow. Fatalii Yellow – An heirloom habanero from Central African Republic. Plant produces good yields of 3-in long by 1-in wide wrinkled hot peppers. These pods are outrageously hot and turn from pale green to golden yellow when mature. Incredible citrus flavor and aroma, if you can stand the heat! 90 days. Fish Pepper - Pre-1870 African-American heirloom. Very beautiful and unusual pepper plant is variegated on both the foliage and the peppers themselves. Leaves and fruit are striped creamy white and green, with the peppers eventually turning orange with brown stripes, then red. Plants are attractive enough just to be used as ornamentals, but peppers are prized for use in cooking. Medium heat. 80 days. Goat’s Weed - A truly unique heirloom from Venezuela, these very hot 2-2.5” long chiles mature late from green to black to orange to red. The pods grow upright on beautiful, striking plants that have dark green leaves with an unusual silver pubescence, similar to serranos. Absolutely gorgeous! 100 days. Golden Cayenne – Very unusual color for a cayenne-type pepper. These lemon-yellow heirloom peppers from the southern U.S. have the same fiery heat of the red varieties, with a unique flavor. You’ll get a good harvest of 4x1/2” peppers that are great for fresh salsa and can also be dried when fully ripe. 75 days. Golden Greek Pepperoncini – This is the traditional pepperoncini from Greece and is the preferred size for pickling. At about 2.5”, it’s smaller than the more common Italian varieties, but has the same great taste and heat. Used while green for pickling or in Greek salads, will turn red if left to ripen. 64 days. Healthy Pepper - A Russian heirloom variety introduced to U.S. gardeners in 1993. Early maturing 24-30" plants are loaded with sweet wedged-shaped fruits, 2½-in at the shoulder by 4-in long, ripening from yellow to orange to red. No heat, all sweet. A customer favorite! 70 days. Inca Red Drop – This chile pepper from the Andes is one of the few Aji-types that ripens earlier for our shorter summers. A real treat in fresh salsa, these flavorful and aromatic chiles ripen from light green to a shiny red. Productive, bushy plants grow well in containers. Red ripe peppers can be dried. 80 days. Jalapa - The first hybrid jalapeno from Mexico. Produces an abundance of hot and flavorful peppers, turning from green to red when mature. Compact plants are very vigorous and an excellent choice for the shorter season of northern gardeners. Peppers are 3” long by 1” wide. A classic jalapeno. 65 days. Jemez NM - From Jemez Pueblo in northern New Mexico at 6,000 ft. Among the earlier maturing New Mexican heirloom chiles. Traditionally roasted while green, it’s also dried when red ripe for making chile powder and delicious red sauce. Medium heat. ~4". 75 days. King of the North – Possibly the best heirloom red bell pepper for the shorter, cooler season of northern gardens. Big, blocky fruit has good flavor when picked green, then becomes sweet and delicious after turning a bright red. 70 days. Mini Red Bell – These tiny, red bell peppers are so cute, and they grow in abundance on very productive plants. All the same sweet flavor of the bigger ones, but much earlier to ripen. Great for stuffing. 62 days. Paper Lantern – This hard-to-find chinense variety from Australia is a great producer of 3” elongated pods that ripen from lime green to coral to red. A fruity flavor and aroma with considerable heat makes this excellent for use in salsa or making hot sauce. 90 days. Pasilla Bajio – Known as ‘Chilaca’ when used fresh, it’s called Pasilla or ‘Chile Negro’ when ripened to a dark brown and dried. The long and wrinkled chiles have a rich, smoky flavor with very little heat. This heirloom chile is a necessary ingredient for making authentic mole sauce. 80 days. Purira - These bushy plants bear a profusion of very hot 2” yellow fruit with purple blotches that grow upright. They turn a glowing orange/red color when ripe and become hotter as they ripen. Mature peppers dry easily for grinding into hot powder. This stunningly beautiful plant is highly recommended. 80 days. Rain Forest – A very exotic Aji-type chile for those who appreciate hot, aromatic peppers. Plants are compact and produce lots of irregular-shaped pods, ripening from light green to coral to red. Ripens earlier than most Aji’s and does well in containers. Origin unknown, but somewhere in South America. 85 days. Roumanian Rainbow – Early, colorful heirloom bell pepper starts out ivory white, then turns persimmon orange, and finally matures to bright red. Plant will have all three colors on it at the same time, which really looks great. Continuous production on relatively compact plants makes this one a winner. 63 days. Sahuaro – This is the next generation of ‘Big Chile’ and is supposed to be even bigger and better. Hard to imagine, but gotta give it a try. Supposed to do everything the Big Chile does, and more. 68 days. Santo Domingo NM - A native New Mexico chile from Santo Domingo Pueblo in northern NM (5,200 ft). Roast when green or dry when red ripe to make an awesome red chile sauce. Medium in heat. 4". 77 days. Serrano Tampiqueno – Large, heirloom plant is the preferred Serrano in Mexico. Ripens a little later, but has the classic Serrano flavor with more heat than the larger varieties. 1.5-2" peppers are hot and usually used while still green in fresh salsa. Will ripen to bright red if left on the plant. 75 days. Sweet Pickle - Very compact plants are crowned by a profusion of upright peppers in colors of yellow, purple, orange, and red, all at the same time. Peppers are about 2 inches long and chunky, making for a spectacularly colorful display. While highly ornamental, this fruit is also very edible and sweet, especially when fully ripened to red. Looks beautiful pickled in clear glass jars. Great for containers. 75 days. Thai Burapa – Small, fiery hot heirloom peppers, similar to the small Thai peppers you see in the store. But, these are from eastern Thailand, near the Cambodian border, and ripen later in the season on taller, bushier plants. Excellent flavor when used fresh, also dries well after ripening to a bright red. 85 days. Thai Denchai – Another heirloom directly from Thailand. These are much larger peppers at ~4” with lots of flavor and plenty of heat for traditional Thai food, though not as hot as the smaller varieties. This one also ripens later in the season on bigger plants, but it’s worth the wait for these delicious peppers. 85 days. Thai Long Sweet – And you probably thought all peppers from Thailand were hot. These 5-6” chillies are very popular with Thais who do not care for spicy food. Great for grilling and frying while green, they are also delicious when left to ripen to a deep red. Can then be dried, but best used fresh. 73 days. Thai Orange – Yet another heirloom variety that’s very popular in Thailand. It’s just as hot as the small, red Thai chilli and has a unique, citrusy flavor that goes especially well with seafood. The plant looks great when the peppers start ripening to a golden orange color. Good for containers and drying. 85 days. Thai Red Chilli – This is the most common small red chilli in Thailand, similar to the Thai chillies you see at the store. You’ll get loads of green and red peppers to make your favorite Thai dishes, with plenty left over for drying. Once you grow these, you’ll never want to buy the ones in the store again! 78 days. Trinidad Perfume – An unusual habanero that ripens to a brilliant yellow and has no heat. Looks and tastes like a potent habanero, but has none of the heat that keeps many people from enjoying them. A truly beautiful heirloom that will add authentic flavor to your Caribbean dishes without the burn. 85 days. Velarde NM - Another native New Mexico chile from Velarde, NM, 6,300’. Roast while still green or leave to ripen red. Matures a little earlier than other NM varieties, so this is a good choice if you want to dry them and grind into chile powder for a delicious red sauce. Medium heat. 3-4". 72 days. White Habanero – One of the most unusual habaneros available, this Yucatan heirloom has 1-1/2” green chiles that turn creamy white.
